Basic Pastry Dough (for pie crusts!)

Nothing magical or fancy here - just a simple pie crust for any type of pie or pot pie.


Freeze 10 tablespoons of cold, chopped butter for 10 minutes, then begin recipe.


In a bowl whish 2-1/2 cups flour with 1-1/4 teaspoon salt.


Add 1/4 cup shortening and combine until it looks like a sandy mixture. Add the 10 tablespoons of very cold butter and mix it with your fingers. It will be uneven with some big and some small chunks. Don't over mix it!


Add 4 tablespoons of ice water and combing with your hands till the dough comes together and you can form a rectangle.


Press the rectangle flat and fold it in thirds (this folding will help make it flaky).


Divide the dough in half and shape each into a disk.


Chill for at least 30 minutes. At this point you can also wrap tightly and freeze.


Roll out each disk and use as a bottom and top layer for your favorite fruit pie or pot pie.

10 tablespoons of butter (chopped and put in freezer for 10 minutes)

2-1/2 cups flour

1-1/4 teaspoon salt

1/4 cup shortening

4 tablespoons ice water
