Our family eats a salad packed with veggies every night. When I use romaine lettuce, I save the "butt" and put it in a bowl of water. I change the water every day & in a few days I have fresh leaves sprouting from the center of the butts.
At this point you'll also notice that roots have formed under the water. Take the lettuce to your garden and plant it. You can regenerate your lettuce all summer long with this neat trick.
