Korean Sloppy Joes With Spicy Slaw

A cool take on traditional sloppy Joes: spicier and maybe even sloppier!



Here's how to do it:


FOR THE SLOPPY JOES


In a pot, brown 2lbs of ground beef with 4 cloves of minced garlic, then drain the extra fat. Add 1 cup of chopped scallions and sauté another four minutes till scallions soften.


In a small bowl, combine 4 tablespoons of brown sugar, 1 cup chicken stock, 4 tablespoons soy sauce, 2 tablespoons gochujan (you can sub hoisin if you can't find Korean gochujan) and 2 teaspoons cornstarch. Then add to the beef mixture and simmer till thickened - about 5 minutes.


FOR THE SPICY SLAW


In a large bowl 4 tablespoons of mayo, the juice of 1/2 of a lime, 3 tablespoons of sriracha, 1 teaspoon red pepper flakes, and a dash of salt. Whisk to combine, then add 4 cups of thinly sliced cabbage, 1/2 thinly sliced red onion, and 1/4 - 1/2 cup chopped cilantro.


TO SERVE


Toast 4 buns, put about 1/2 cup sloppy joe mixture on the bun, top with spicy slaw and enjoy!
