Whole Wheat Bread Baked in Bulk

Back before gas prices sky rocketed, we used to buy whole wheat berries in bulk from Montana and mill & bake our own bread. Normally when you buy wheat flour in the store the bran and the germ have been separated so the flour doesn't spoil. But when you mill your own wheat from whole wheat berries, you get to mill that bran and germ healthy goodness right into the flour. I LOVE this bread!



Here's how you do it:


Combine with a spoon in your heavy duty stand mixer, 4.5 cups hot water, 4 teaspoons salt, 2/3 cup honey, and 1/4 teaspoon vitamin C powder.


Turn mixer on and add 6 cups of flour*.


With mixer still on, add 2 tablespoons instant dried yeast. Scrape down the sides. Rest 10 minutes.


Turn mixer back on and add 6 cups flour*. If dough is sticky add a little more flour till dough comes together. Knead on low for 6 minutes.


Turn dough onto a floured surface. Divide dough into 8 non-stick sprayed mini loaf pans.


Put these mini loaf trays in oven (not turned on) for about an hour till doubled.


Leaving loaves in oven, turn oven on to 350 and bake 15-25 minutes till done.


INGREDIENTS


4.5 cups hot water

4 teaspoons salt

2/3 cup honey

1/4 teaspoon vitamin C powder (optional)

* 12 cups freshly milled whole wheat flour

2 tablespoons instant dried yeast
